Recipe: Potato and Carrot Fritters
On some weekends, I like to make those potato and carrot fritters for breakfast. They are nice variations to pancakes. You can add also throw in some bacon and your favorite herbs and spices.
- 3 medium sized potatoes, finely grated
- 1 carrot, finely grated
- 1 medium onion, finely grated
- 2 green onions, chopped
- 2 tbsp all-purpose flour
- 1 egg, lightly beaten
- ¼ tsp paprika
- Salt and pepper to taste
- In a bowl, combine all the ingredients.
- Heat a cast iron pan over medium high heat. Add about 1 tbsp of oil to the pan and fry the fritters until golden brown. You can also choose to leave out the oil completely. Serve warm.
