Recipe: Potato and Carrot Fritters

On some weekends, I like to make those potato and carrot fritters for breakfast. They are nice variations to pancakes. You can add also throw in some bacon and your favorite herbs and spices.


  • 3 medium sized potatoes, finely grated
  • 1 carrot, finely grated
  • 1 medium onion, finely grated
  • 2 green onions, chopped
  • 2 tbsp all-purpose flour
  • 1 egg, lightly beaten
  • ¼ tsp paprika
  • Salt and pepper to taste


  1. In a bowl, combine all the ingredients.
  2. Heat a cast iron pan over medium high heat. Add about 1 tbsp of oil to the pan and fry the fritters until golden brown. You can also choose to leave out the oil completely. Serve warm.
